Spinach and Bell Pepper Scramble

Eggs are staple for my family for weekend breakfast, but the standard methods of fried, scrambled or boiled get boring after a while. I started looking at recipes for scrambled eggs, but many of these included things like sausage and lots of cheese. Since I'm trying to get my family to eat more vegetables I came up with this recipe. 

 Spinach and Bell Pepper Scramble

When I get asked what food you should eat for weight loss, my answer is always vegetables. So why not have vegetables with breakfast as well. This recipe is easily adaptable to your likes and to whatever you have on hand. When I cook, I tend to not measure things very much (which is why I don't publish recipes very often), so feel free to adjust the quantities to your liking. 

Ingredients (4 servings)

  • 6 eggs
  • 1 large potato
  • 1 bell pepper
  • 1 small onion
  • 1 tbsp olive oil
  • 2 cups chopped spinach
  • dash of cayenne pepper sauce
  • cheddar chees (optional)

Chop the potato and steam until soft. I use the microwave so it is quick. Chop the onion and bell pepper and fry in olive oil. When these start to get soft, add the eggs and cayenne pepper sauce. Add the stemed potato. Stir while cooking. When egg is cooked add the cheddar cheese if desired. Add the spinach just before serving and cook only long enough for it to wilt. Serve with some fresh ground pepper.
