Quinoa, Spinach, Walnut and Cranberry salad
Quinoa is great to use in salads. It is fluffier and lighter tasting than many other whole grains. It is also gluten free. I like my salads to contain greens, and this one does. This salad travels well and it only takes a few minutes to make if you have the quinoa precooked, so it makes a great salad to take to work for lunch.
I don't like to be long winded for such a simple recipe, so here it is:
- 1/2 cup cooked quinoa (approximately 1/4 cup dry)
- 1 cup chopped spinach (or use a spinach and baby kale mix)
- handful of chopped walnuts
- handful of dried cranberries
- sprig of fresh thyme, finely chopped
- splash of orange juice
- splash of olive oil
