Healthy Chocolate Balls

Christmas time is a time for cookies and chocolate. I find I am tempted by all the time, so it helps to have something around that is decadent and chocolaty, but somewhat healthier than cookies and chocolates. These chocolate balls fit the bill.

chocolate ballsAnd sometimes you just need a chocolate fix. I try to eat just a little of really good dark chocolate, but the calories add up and aside from some supposed antioxidents in the dark chocolate, they are mostly empty calories. These chocolate balls may not be as decadent as good dark chocolate, but they are not empty calories and they are delicious. This recipe makes a small batch, just in case you are tempted to eat them all.

This recipe was an experiment on how to use healthy ingredients including dehydrated powdered kale and still come up with something that tasted absolutely decadent. You cannot taste the kale, but If the idea of kale added to chocolate turns you off, leave it out. 

 

 

Here is the recipe:

1 tbsp cocoa powder + 1 tbsp for dipping

1 tbsp chia seed

1 tbsp hemp seed

1/4 cup dehydrated kale 

handful walnuts

3-4 dates

1 tbsp coconut oil

Crush the kale with your fingers, removing stems ad you go. It is not necessary to include the kale if you don't have a dehydrator, but I like the idea of sneaking vegetables into my snacks. Blend the walnuts until powdery, then add the dates and a little more. Add the remaining ingredients accept the coconut oil and blend until powdery. Remove from the blender and mix with the coconut oil. Roll into balls and dip in cocoa powder. Refridgerate to harden.
