Creamy Green Soup

I love the wonderful bright green colour of this soup. It just looks so healthy. It has been a favourite of my family for years. It takes a little while to make, but is worth the effort. This soup is full of vegetables so it really is as healthy as it looks. It makes a great lunch or light dinner.

 

Creamy Green soup

 You will need a powerful blender to get the smoothest soup. Also beware that blending it hot is not recommended by some blender manufacturers. I've never had a major accident, but I did actually melt the plastic of the bottom of my blender this way. I've never tried it with a hand blender, but that might work as well.

 Combine the following in a large sauce pan. Cover and simmer for about 15 minutes, stirring often.

  • 2 cups cauliflower
  • 6 cups brocolli 
  • 1 carrot
  • 1 potatoe
  • 1 onion chopped
  • 1 large or 2 small zuchini
  • 2 tbsp olive oil
  • 1/3 cup water

Add 6 cups of water and bring to a boil. Boil for 25 - 30 minutes. Halfway through add:

  • 2 cups spinach (this helps to change the colour from an ugly yellow green to the beautiful bright green.)

Once finished cooking cool if required. Blend in small batches. Reheat and serve.
