Cranberry Goat Cheese Salad

One of my go to lunches is a salad. I like them simple, with just a few key ingredients. I can quickly prepare my salad in the morning before work or right before lunch when I'm home. This one is filling enough to stand as a meal and contains protein and healthy fats as well as a generous serving of leafy green vegetables. It also tastes delicious.


 In the summer I grow different kinds of lettuce and other greens so I can have a salad right from the garden. How fresh is that? The recipe for the salad is:

  • approximately 2 cups mixed greens (I used a prewashed baby kale, spinach and chard, but a lettuce blend is delicious as well)
  • a 1/2 to 1 inch slice of goat cheese crumbled
  • 5-6 walnuts, chopped
  • handful of dried cranberries

Combine the above and then dress with

  • 2 tsp olive oil
  • 1 tsp balsamic vinegar

I have also used a balsamic reduction as a dressing which is sweeter. If your cranberries are quite tart, you may want to try that.
