Banana Bread Breakfast Bars

When you need a quick breakfast or morning snack a slice of banana bread is very enticing. These bars travel better, can be made gluten free and contain healthier ingredients.

 Having a quick breakfast or morning snack in the house serves many purposes. By having something like this available you can avoid stopping at the local coffee shop for a treat or a fast food place for breakfast. While not the healthiest option out there they are not too bad. They certainly taste more decadent than they really are.

I used chick pea (garbonzo bean) flour  in this recipe. I make my own by grinding dried chick peas in my Blendtec blender. You can also purchase chick pea flour at a health food store. You could also substitute any other type of flour, but I like chick pea flour for its high protein content. 


  • 1 1/2 cup rolled oats (i used old fashioned, but quick oats might give a less chewy texture)
  • 1 cup of chick peas, ground to flour consistency
  • 1/2 tsp salt (optional)
  • 1 cup of chopped walnuts
  • 1 cup chipped dates
  • 3 bananas mashed
  • 1/3 cup honey
  • 1/3 cup oil (a walnut oil would be a good choice, but any will work)

Stir ingredients until combined, pour into a lightly oiled 9x13 inch pan. Bake at 350 deg for 30 minutes. These bars are wonderful hot, but delicious anytime.
